Libertine Brewing Company announces the opening of SLO location
Locally-owned Libertine Brewing Company officially opened its doors to the public on Wednesday February 15.
Libertine will be a full service restaurant offering fresh local fare and an assortment of beers in beautiful downtown San Luis Obispo. On the corner of Pacific and Broad streets, the new restaurant will be home to nearly 80 taps; 20 of Libertine’s barrel aged wild ales, cold brew coffee, house made kombucha, local wines and a diverse guest-beer list.
Guest beers offered will emphasize on ‘rarity’ while being held to the highest standards of excellence. Libertine’s guest list is expertly curated by Tyler Clark, head of brewing operations.
“We are just trying to source from the best possible breweries to complement the complexity of our own beer,” Clark said. “Our opening draft list is a labor of love, there is truly nothing like it in California!”
The San Luis Obispo location has been home to Libertine’s brewing operation for nearly two years and a full restaurant was the eventual goal for the space since day one.
The 9,000-square foot building now hosts the previously envisioned restaurant, bar, retail space and a corner coffee shop in addition to the existing brewery and tasting room.
For nearly five years, Libertine Brewing Company has been brewing beers in a unique and antiquated fashion. Originally brewing in a small waterfront space in Morro Bay, Libertine focuses on Belgian farmhouse style ales that incorporate wild, local yeast strains. Libertine has since made a name for itself as one of the few breweries in the country paying homage to pre-industrial roots of the brewing industry using open fermentation and aging in oak. By principle, each Libertine beer is carefully crafted to showcase Central Coast terroir while incorporating fresh, local ingredients.
Now with the new restaurant open, Libertine is able to continue this support for local growers and makers. From nuances in the construction to the arrangement of the food menu, much of the restaurant was built using the support of the San Luis Obispo community.
“Local is a huge priority at Libertine,” Libertine’s Head Chef Bernard Livingston, Said. “We’re using the freshest products we can get, from as close as we can get them. The menu is designed with Libertine’s wild ales in mind; the restaurant tailored to complement the beer.”
Libertine Brewing Company was founded in 2012 on the premise of bringing the best beer selection to the Central Coast, while brewing unique beers and products to complement. With a strong emphasis on tradition while remaining authentic to our region, we have grown from a small brewpub on the water in Morro Bay, to a 9,000-square foot production and tasting facility on the edge of downtown San Luis Obispo. All of our Wild Ales are brewed and then transferred into (open-top-remove, implied/redundant) coolships overnight, allowing the local wild yeasts of our area to naturally fall in and start the fermentation process, giving our beers a true Central Coast terroir. Along with Wild Ales, we also make barrel aged cold brew coffee and kombucha using custom roasted beans and tea blends from local purveyors and incorporating seasonal fruits and spices for additional flavoring.
