Luxury and pampering will be gracing SLO Public Market later this year with the addition of Central Coast Hair Co. With a passion for hair and making her clients feel beautiful, Sammi-Jo Smith has been serving the Central Coast Community for 2 years, but she fell head over heels in love with blonding 8 years ago. She now specializes in blonding, platinum cards, lived-in blonde and high-end coloring techniques.
Upon entering the salon guests are greeted by a friendly receptionist, a complimentary champagne bar, and a full retail area set to sell salon-quality skincare, hot tools, jewelry, and Gigi Pip Hats. The salon offers next-level blonding, balayage, all things color, extensions, spray tans, an enclosed washroom, hydra facials, and hair education. Central Coast Hair Co. will be home to a full-service brow bar, set to offer powder brows, microblading, waxing, and brow lamination. Central Coast Hair Co. offers group events — treat the bridal party, bachelorette party, or birthday guests to a full day of pampering. The group offers include blow-outs for everyone in the party, styling/updos, on-site makeup artist, charcuterie board, and — of course — champagne to celebrate.
Sammi-Jo Smith and her team understand the importance of hard work. Smith was born and raised in Lake Tahoe where she worked as a ranch hand and was the only female lift operator/maintenance worker at the ski resort. She has put that practice of hard work into her salon by making sure she and her team stay up to date with the latest trends and techniques, as well as attending training to refine their skills.
“I take my career very seriously,” said Smith. “Since moving here I have been extremely blessed to have a completely full clientele — the beautiful women and men I have met make me feel like I am meant to be here. I look forward to walking through life with my clients and meeting more amazing souls.”

SLO Public Market is absolutely thrilled to finish out our Market Hall with our latest tenant, Jay Bird’s Nashville Hot Chicken. Founded in May 2019, Jay Bird’s quickly rose in popularity with their delectable chicken sandwich. They were even mentioned in the “Top 50 Fried Chicken Sandwiches in California” at #12. Their menu offers a variety of Chicken Sandwiches, as well as chicken tenders, blazin’ fries, and their chicken and waffle combo are guaranteed to make mouths water.
Every guest starts with their choice of entrée with amazing options like the “Mac Daddy” — a chicken sandwich with mac n’ cheese, and comeback sauce — or the bone-in options with your choice of light or dark meat. Then the guests choose their level of spice, Jay Bird’s offers 5 levels of spice ranging from “lain Jay” to “Fire” which can only be described as reaper hot. Finally, the guests complete their meal with a choice of side and house-made sauce(s).
Jay Bird’s was developed by Heinrich Stasiuk, Owner & CEO of Wild Thyme Restaurant Group and “Chef Jay” Bogsinske. Chef Jay started working in kitchens at the age of 17 and has continued to grow and push the envelope with his amazing food.
